Healing Sourdough Bread: A Functional Staple for Gut-Brain Health

Ingredients

  • 400 g organic bread flour (or 50/50 bread + freshly milled whole wheat for extra minerals)

  • 100 g organic all-purpose or spelt flour

  • 350 g filtered water (75–80 °F)

  • 100 g active, bubbly 100%-hydration sourdough starter (fed 6–12 hours prior)

  • 10 g sea salt or Redmond Real Salt

Instructions

  1. Morning (8–12 hours after feeding starter): In a large bowl, mix flours and water until no dry bits remain (shaggy dough). Cover and rest 30–60 minutes (autolyse).

  2. Add starter and salt. Pinch and fold dough in the bowl for 1–2 minutes until fully incorporated. Cover.

  3. Bulk fermentation (8–12 hours at 72–76 °F): Perform 4–6 gentle stretch-and-folds every 30 minutes for the first 2–3 hours, then let rest undisturbed. Dough should increase 50–75% in volume, feel airy, and show bubbles on the sides and surface.

  4. Pre-shape: Turn dough onto a lightly floured counter. Fold edges into center to form a loose round. Rest 20 minutes.

  5. Final shape: Flip dough, shape into a tight boule, and place seam-side up in a rice-floured banneton or cloth-lined bowl.

  6. Cold proof: Cover and refrigerate 12–24 hours (longer = tangier flavor, better digestibility).

  7. Bake: Preheat oven with Dutch oven inside to 475 °F. Invert dough onto parchment, score, and bake covered 25 minutes. Remove lid, lower to 435 °F, bake another 20–25 minutes until deep mahogany (internal temp 205–210 °F). Cool on rack minimum 4 hours.
